REDMOND. Aptly named, this popular restaurant serves Mexican cuisine using only the freshest ingredients. The majority of dishes are handmade, and the restaurant features a stellar lineup of tacos, burritos, and taquitos. Plus, the salsa bar is legendary.

BELLEVUE. This well-received regional chain is known for its Americanized versions of Mexican favorites. Tacos, burritos, enchiladas, and fajitas are among the classics you'll find, stuffed with meats and vegetables and dripping with melted cheese and fresh sauces. Molcajete stew, made with chicken, beef, or seafood, is another popular dish, as are slow-cooked lamb shank and huevos rancheros. Plenty of combination plates are also a big draw. Extremely popular with families and large groups.

REDMOND. Since 1974, this popular eatery has drawn rave critical reviews, and for good reason, as Azteca offers the region's finest takes on traditional Mexican cuisine. Choose from a great variety of burritos, enchiladas, and combination dinners. Reservations recommended for parties of 12 or more.

CAPITOL HILL. What was formerly known as Bimbo's Bitchin' Burrito Kitchen has toned down its name, gained a little more space, and become a 21+ only establishment. What hasn't changed, however, are well-proportioned tacos and quesadillas, not to mention unbeatable guacamole and a famous herb-roasted chicken burrito ­ plus, cumin-lime sour cream makes everything even tastier. Add a house-made margarita or a Negra Modelo, and you've got a great meal. However, if you get a little grief from the servers, don't be put off. It's part of the restaurant's signature attitude.

DOWNTOWN. Take a trip down to Buenos Aires at this Argentinean-style steakhouse, where the atmosphere springs to life with the seductive sounds of the tango, the aroma of wood-grilled beef, and authentically rustic decor that is more Plaza de Mayo than Pioneer Square. For a traditional experience, regulars laud the parrillada (a Argentinean mixed-grill of beef, chicken, and sausage); less adventuresome palates, however, will be relieved to find center-cut filet mignons and classic rib-eyes on the menu as well.
